Gluten-Free Chocolate Chip Cookies with Almond-Coconut
Merry Christmas, everyone! My new recipe is a wonderful snack option for family holiday events. Using only healthy ingredients such as almond flour, coconut oil, and 70% dark chocolate, these delicious, simple, gluten-free, and dairy-free chocolate chip scones may be a big hit with the people you are entertaining!
Makes about 10-12 cookies
Ingredients:
2 ½ cups almond flour
½ tsp salt
½ tsp baking powder
½ cup organic maple syrup
2 t vanilla
1 large egg, beaten
½ c organic virgin coconut oil, in solid state
3/4 cup to 1 cup dark chocolate chips (70% organic chips by Equal Exchange that can be ordered at: http://shop.equalexchange.coop/index.php/catalog/product/view/id/1140/s/organic-chocolate-chips-bittersweet/?gclid=CKbhx_a099ACFQeUfgodyFEDRg)
Directions:
Preheat oven to 350º.
Add the first three ingredients in a large mixing bowl and mix well.
In a second smaller mixing bowl, combine the next four ingredients. Mix well to incorporate coconut oil, mashing with a fork if needed to distribute evenly.
Pour the wet mixture into the large mixing bowl to combine the wet and dry ingredients. Add chocolate chips and stir well to incorporate.
Use a tablespoon, scoop rounded dough portions, and form into somewhat rounded shapes with your fingers.
Place everything onto a baking sheet (scones won’t spread) and bake for 20 minutes until just turning golden brown on the edges and tender on the inside. Cool. Enjoy!
