Gluten-Free Chocolate Chip Cookies with Almond-Coconut


Merry Christmas, everyone! My new recipe is a wonderful snack option for family holiday events. Using only healthy ingredients such as almond flour, coconut oil, and 70% dark chocolate, these delicious, simple, gluten-free, and dairy-free chocolate chip scones may be a big hit with the people you are entertaining!

Makes about 10-12 cookies

Ingredients:

  1. 2 ½ cups almond flour

  2. ½ tsp salt

  3. ½ tsp baking powder

  4. ½ cup organic maple syrup

  5. 2 t vanilla

  6. 1 large egg, beaten

  7. ½ c organic virgin coconut oil, in solid state

  8. 3/4 cup to 1 cup dark chocolate chips (70% organic chips by Equal Exchange that can be ordered at: http://shop.equalexchange.coop/index.php/catalog/product/view/id/1140/s/organic-chocolate-chips-bittersweet/?gclid=CKbhx_a099ACFQeUfgodyFEDRg)

 

Directions:

  • Preheat oven to 350º.

  • Add the first three ingredients in a large mixing bowl and mix well.

  • In a second smaller mixing bowl, combine the next four ingredients. Mix well to incorporate coconut oil, mashing with a fork if needed to distribute evenly.

  • Pour the wet mixture into the large mixing bowl to combine the wet and dry ingredients. Add chocolate chips and stir well to incorporate.

  • Use a tablespoon, scoop rounded dough portions, and form into somewhat rounded shapes with your fingers.

  • Place everything onto a baking sheet (scones won’t spread) and bake for 20 minutes until just turning golden brown on the edges and tender on the inside. Cool. Enjoy!
