There is no cooking involved! It is so easy, delicious, and full of fiber and nutrients, including omega-3 fatty acids, fiber, protein, and antioxidants. Soaked chia seeds, as a mucilaginous functional food, is a perfect ingredient for gut healing. This recipe also has a low glycemic load, making it a blood-sugar-friendly meal for insulin resistance and diabetes.
Super-Food Chia Parfait Recipe
Ingredients:
Chia seeds: 2-3 tbsp
Freshly ground flaxseed: 1 tbsp
Cinnamon powder: 1 tsp
Coconut milk: 1-2 cups
Coconut yogurt: 2 tbsp
Acacia fiber powder: 1/2 tbsp
Soaked and dehydrated raw walnuts: a few halves
Coconut MCT oil: 1/4 to 1/2 tsp
Sweetener (optional): raw honey, stevia, or monk fruit
Blueberries
Sliced kiwi
Directions:
Mix chia seeds in coconut milk evenly and keep it in the refrigerator overnight.
The following morning, bring the soaked chia seeds out of the refrigerator. You can serve it as is or heat it up on the stove briefly, so bring up a room or warm temperature.
Mix in all the rest of the ingredients.
