Super-Food Chia Parfait Recipe


There is no cooking involved! It is so easy, delicious, and full of fiber and nutrients, including omega-3 fatty acids, fiber, protein, and antioxidants. Soaked chia seeds, as a mucilaginous functional food, is a perfect ingredient for gut healing. This recipe also has a low glycemic load, making it a blood-sugar-friendly meal for insulin resistance and diabetes.


Super-Food Chia Parfait Recipe

Ingredients:

  • Chia seeds: 2-3 tbsp

  • Freshly ground flaxseed: 1 tbsp

  • Cinnamon powder: 1 tsp

  • Coconut milk: 1-2 cups

  • Coconut yogurt: 2 tbsp

  • Acacia fiber powder: 1/2 tbsp

  • Soaked and dehydrated raw walnuts: a few halves

  • Coconut MCT oil: 1/4 to 1/2 tsp

  • Sweetener (optional): raw honey, stevia, or monk fruit

  • Blueberries

  • Sliced kiwi

 

Directions:

  • Mix chia seeds in coconut milk evenly and keep it in the refrigerator overnight.

  • The following morning, bring the soaked chia seeds out of the refrigerator. You can serve it as is or heat it up on the stove briefly, so bring up a room or warm temperature.

  • Mix in all the rest of the ingredients.

  • Enjoy!
